There may be two feet of snow with more to come ... but here is the warm and satisfying breakfast I made!
Ingredients
- 1/2 c. quinoa, soaked and rinsed.
- 1 c. almond milk blended with 2 dates for sweetness
- ½ t. pumpkin pie spice
- ½ t. cinnamon
Method
- Place almond milk and rinsed quinoa in a pot.
- Bring to a boil, then simmer until the liquid is absorbed.
- Stir in the pumpkin pie spice and cinnamon.
Enjoy warm or cold. Add some baked apples, nuts or raisins as a topping, if desired.
