Quinoa Pumpkin-Pie Spiced Porridge

There may be two feet of snow with more to come … but here is the warm and satisfying breakfast I made!

  1. 1/2 c. quinoa, soaked and rinsed.

  2. 1 c. almond milk blended with 2 dates for sweetness

  3. ½ t. pumpkin pie spice

  4. ½ t. cinnamon

Method

  1. Place almond milk and rinsed quinoa in a pot.

  2. Bring to a boil, then simmer until the liquid is absorbed.

  3. Stir in the pumpkin pie spice and cinnamon.

Enjoy warm or cold. Add some baked apples, nuts or raisins as a topping, if desired.
